We discovered Duck fish at our local fish mongers when I was pregnant with Cuddles. I was seeking a small Australian fish, with no bones and a mild flavor that children liked. She guaranteed me that Duck fish would fit the bill and that her grandchildren request seconds. It was a good recommendation. The recipe below is quick and easy to throw together after a busy day. It is a Fresh and Fast Friday Recipe. The salad ingredients I have used are what I picked from the garden. Use any salad ingredients you and your family enjoy, or have available.
Serves: 4
Preparation Time: 15 minutes
Cook Time: 10 minutes
Ingredients:
250 grams of Duck fish
1/3 cup of flour
1/2 cup of fresh breadcrumbs (2 pieces of bread whizzed in food processor)
1 egg lightly whisked
1 tablespoon of Parmesan cheese
1 tablespoon of oil of choice for cooking
1/2 avocado – diced
8 cherry tomatoes – halved
1 small capsicum – sliced
1 lemon to serve
Dressing:
2 tablespoons whole egg mayonnaise
1 teaspoon seeded mustard
squeeze of lemon juice
Steps:
Put each of the flour, crumbs and egg into a seperate bowl and dip each piece of fish firstly in the flour, then the egg, then the crumbs
Prepare the salad by adding all of the fresh ingredients to a bowl
Heat a pan and add a dash of oil, cook the fish until golden
Slice the fish and add to the top of the salad to serve
Mix the dressing ingredients together and place in a bowl
Serve with lemon and the dressing on the side
