Healthy Winter Recipe for Baked Vegetable Slice
Simple, quick and healthy with a flavour that the whole family will enjoy. This baked vegetable slice can be served as a main or a side dish. It is simple to substitute ingredients that you have available if the ones listed are not ones that you have on hand. This one evolved because I had collected the little harvest shown below. The day I created this meal I did not want to leave the house to get any other groceries. I added one of our home grown pumpkins to create a substantial meal. This meal is a classic example of shopping the backyard and using the things you have on hand to create a fresh and healthy family meal.
