This week I have been focusing on entertaining, it is on my mind and I know it is a part of the festive season that can cause stress for many people. It is an additional thing to have to manage at an already busy time. On Monday I added a recipe for lovely, different mushroom salad, perfect to take to a BBQ.
The recipe belowis one that I have made many times and is always a welcome addition to a gathering. It is a “two for one” nibble. The salsa topping that is left over can be served separately with toasted pita slices, wafers or corn chips.
I like this type of party food, it is easy entertaining. It uses fresh new season produce, is simple to prepare and it looks good.
Each of the recipe components can be made in advance, ready to assemble as required. This leaves you free to mingle and enjoy the company of your guests.
