Moroccan Style Sausage Rolls

An “all rounder” recipe

I call a recipe an “all rounder” if I can:

  • Freeze it
  • Give it as a work lunch to Mr Fresh
  • Serve it to Punky (4 years old) with a salad or vegetables for dinner
  • Serve it as a finger food for entertaining with my home made Hommus Dip.

“All rounder” recipes are important in our house because:

  • The demand for food is constantly on the increase. With two growing little boys and Mr Fresh’s large appetite I could churn it out non stop and someone would still open the fridge 10 times a day looking for something to eat…
  • We have visitors most weekends 
  • I currently have less time than I ever had to cook and entertain

This is my recipe for Moroccan Style Sausage Rolls:

An all-rounder recipe - it freezers, kids like it, great finger food for entertaining.Tasty Moroccan flavors, lamb, craisins and spinach in puff pastry

Ingredients
  • 3 puff pastry sheets
  • 500 grams of lamb mince
  • 3 tablespoons of pine nuts
  • 2 and ½ tablespoons of Craisins (sundried cranberries)
  • 1 and ½ teaspoons of ground coriander seed
  • 1 and ½ teaspoons of ground cumin seed
  • 1 tablespoon of lemon juice
  • 100 grams of fresh spinach leaves washed and chopped
  • 4 sprigs of fresh coriander leaves washed and chopped
  • 3 sprigs of fresh parsley leaves washed and chopped
  • 2 eggs lightly beaten
Instructions
  1. Remove the pastry from the freezer to defrost
  2. Heat the oven to 180 degrees
  3. Put the mince into a bowl
  4. Add all of the ingredients to the bowl with the mince, except the egg, and mix together
  5. Add most of the egg and mix through - leave a small amount to brush the pastry top before placing into the oven.
  6. Lay the mix along the edge of the pastry closest to you and then roll the pastry up and over into a log
  7. Cut into pieces prior to placing in the oven
  8. Put the pieces onto a baking tray lined with baking paper and brush with the left over egg
  9. Cook in the oven (fan forced) for 30 minutes
  10. Remove from the oven and cool
  11. Serve with Hommus
