Egg and Bacon Slice

Simple flavors to please the whole family. Perfect picnic food, or a lunch box treat.

  • 100 grams of bacon - chopped into small pieces
  • 1 tablespoon cooking oil
  • 1 shallot - chopped
  • 1 medium sized zucchini - grated
  • 5 eggs - lightly whisked
  • 1/2 cup cheese - grated
  • 200 grams ricotta light
  • 3/4 cup self raising flour
  • generous pinch salt
  • three grinds of cracked pepper
  • 12 or more fresh sage leaves - torn


  1. Turn on the oven to heat to 170 degrees
  2. Heat a pan over medium heat and add the oil, shallot and bacon
  3. Stir until the bacon is cooked
  4. To a mixing bowl add all of the ingredients, except the flour, and stir until well combined
  5. Add the flour and stir gently to incorporate
  6. Grease a slice tray and pour in the mixture
  7. Give the tray a jiggle to settle the mixture evenly in the tray
  8. Bake in the oven for 20 - 25 minutes until browned on top
  9. Allow to sit for a few minutes to cool prior to removing from the tray and slicing.
  10. Serve warm or cold and with a salad or vegetables of choice
