Spinach and pine nuts

Zingy, fresh side dish perfect to serve with pork

  • 100 grams freshly picked spinach leaves washed
  • 1 clove garlic finely chopped
  • 2 anchovies chopped
  • 2 tbsp pine nuts
  • 1/2 lemon juiced
  • 2 tbsp sultanas
  • 1 tbsp olive oil
  • salt and pepper to season


  1. Heat a fry pan and add a small amount of oil to the pan.

  2. Add the oil and then the garlic and the anchovies

  3. Stir until the anchovy is starting to dissolve

  4. Add the spinach and the sultanas and stir for a couple of minutes until the spinach is wilted.

  5. Pour over the lemon juice and season with a pinch of salt and generous grind of pepper

  6. Place a serving of pork fillet on top of the spinach to serve
