Chipotle Chilli Mushrooms

The smokey Mexican flavor of chipotle freshened by lime and coriander makes this a memorable side dish, or vegetarian appetiser.

  • 1 tablespoon cooking oil of choice
  • 3 cloves garlic - chopped
  • 1 1/2 tbsp coriander roots - chopped finely
  • 2 chipotle chilli in adobe sauce - chopped finely
  • 700 grams mushrooms - whole
  • 1 lime - zest and juice
  • fresh coriander leaves
  • pinch salt
  • freshly ground pepper


  1. *Use a pan that can go from stove top to oven
  2. Set the oven to heat to 160 degrees
  3. Add the oil, garlic, coriander root, chipotle and fry for a few minutes until fragrant
  4. Add the mushrooms and stir to coat
  5. Cook for 5 minutes on the stove top
  6. Add the pan to the oven to cook for 15 minutes
  7. Remove from the oven and add the lime zest and stir
  8. Add the fresh coriander, salt and pepper and lime juice to serve

Recipe Notes

This dish can be made ahead of time and reheated. This allows the flavors to develop.
