Christmas Left Over Fritters

If you find yourself with a fridge full of left overs after the festivities have wound up, this recipe if for you, in-fact it is good any time of the year!

  • 70 grams green beans - finely chopped
  • 1 green apple - peeled and grated
  • 1 small zucchini (about 200 grams) peeled and grated
  • 120 grams Christmas ham - chopped into small pieces
  • 2 eggs
  • 4 tablespoons plain flour
  • pinch salt
  • fresh sage leaves - chopped
  • fresh chives - chopped
  • Coconut oil for cooking
  • lemon wedges to serve (optional)


  1. Add all of the ingredients, except the oil, to a bowl and mix well to combine
  2. Add a small amount of oil to a pan and heat it to a medium high temperature
  3. Scoop out a spoon of the fritter mixture into the pan and flatten with the back of the spoon
  4. Cook on each side for 2-3 minutes and then turn
  5. Drain on paper towel and add to a plate in a warm oven until all of the fritters are cooked and ready to serve
  6. Cook in batches until all of the mixture is used and serve with lemon wedges if desired
