Baked capsicum dip with paprika and macadamia nuts

Dairy and gluten free autumn dip for entertaining

  • 400 gram capsicum whole
  • 1 teasp paprika sweet
  • 2 pinch salt
  • drizzle olive oil
  • 1/3 cup macadamia nuts
  • handful fresh parsley and coriander
  • 3 grinds black pepper

To serve:

  • drizzle olive oil
  • pinch paprika sweet


  1. Heat oven to 170 degrees celcius (fan forced)

  2. Add the whole capsicum to a baking tray and drizzle with olive oil and a good sprinkle of paprika

  3. Bake in the oven for 25 minutes

  4. Remove the capsicum from the oven and allow to cool

Remove the top and center of each capsicum and any tough bits of skin that have over-cooked in the oven

  1. Add all ingredients to a food processor bowl and blitz until well combined

  2. Serve with a drizzle of olive oil and additional paprika
