Lemon Parsley Chicken

Slow cooker roast chicken with lemon parsley. A family friendly meal to prepare for a Winter dinner. Benefit from adding nutritious fresh garden herbs.

  • 1 tablespoon coconut oil
  • 3 cloves garlic chopped
  • 2 cm fresh ginger skin removed and grated
  • 3 sprigs fresh rosemary
  • 1.8 kg free range chicken approx
  • 2 tablespoons red wine vinegar
  • 1/2 cup chicken stock
  • 2 lemons juice and zest
  • 12 stems fresh parsley


  1. On the stove top, add the oil, garlic, ginger, lemon zest and rosemary until fragrant
  2. Add the chicken and cook until browned on both sides
  3. Add the red wine vinegar
  4. Return the removal pan to the machine and add the stock and most of the parsley and lemon juice
  5. Cook on high for 5 hours
  6. Serve with vegetables of choice and top with additional fresh parsley leaves

Recipe Notes

The recipe instructions 1 -3 are based on using a slow cooker with a removable bowl that can be used on the stove top.
If your machine can no do this then do these steps in a pan and then continue with the slow cooker.
