  • 1/2 wombok Chinese cabbage-finely sliced
  • 1/2 cup olives
  • 1 carrot shaved finely
  • 1 small-medium fennel bulb finely sliced


  • 2 anchovies finely chopped
  • 1/4 cup orange juice
  • 1 tablespoon lemon juice
  • pinch white pepper
  • 1 tablespoon olive oil

To Serve

  • leaves fresh mint
  • fennel fronds


  1. Add the salad ingredients to a serving bowl and toss to combine
  2. Combine the dressing ingredients and whisk to combine
  3. Pour over the dressing prior to serving and add the fresh herbs
