Healthy lamb skewers

BBQ and entertaining weather over the summer holidays means that crowd pleasing recipes are always handy to be able to put together at a moments notice. These are healthy, simple and popular additions to the family meal table or to serve to guests.

  • 1/2 tablespoon coconut oil
  • 500 grams lamb diced into small cubes
  • teaspoon oregano dried
  • pinch salt
  • 1 small eggplant peeled and cut into cubes
  • 1 small zucchini peeled and cut into slices
  • 400 grams cherry tomatoes
  • 200 grams mushrooms


  • 1/2 cup natural yogurt
  • 1/2 cucumber grated
  • 1/2 lemon juiced
  • 1 clove garlic chopped finely
  • handful fresh mint chopped finely


  1. Randomly add and alternate the pieces of meat and vegetables to each skewer until full
  2. Heat a griddle pan or the BBQ until hot.
  3. Mix together the sauce ingredients and set aside until serving
  4. Brush the plate or base of the pan with coconut oil to prevent the skewers from sticking and cook them for approximately 2 minutes, turn and cook the next side and repeat until the meat is cooked through. Sprinkle with the oregano and salt while cooking
  5. Once the meat has cooked through remove to a serving plate
  6. Serve drizzled with the sauce, or add it on the side for dipping

Recipe Notes

If using wooden skewers soak them for a couple of hours in water prior to suing to avoid splintered pieces and burning when cooking
The tomatoes may fall off the skewers while they are cooking as they will be the quickest thing to cook. Simply scoop them up and set them aside to add to the plate when the skewers are served
Use any vegetables your family enjoys.
I had intended to add haloumi cheese to these but forgot to add it when I assembled them.
