Egg and Gluten Free Vegetable Fritters

Ingredients

  • 1 zucchini grated
  • 1/2 carrot grated
  • 1/2 corn cob kernals
  • handful green beans finely sliced
  • 2 tbsp fresh mint leaves chopped
  • 1 tbsp fresh coriander leaves chopped
  • pinch dried chilli flakes
  • pinch salt
  • 3 tbsp millet flour
  • 3 tbsp coconut oil for cooking

Instructions

  1. Add the ingredients to a bowl (except the oil) and mix well to combine

  2. Heat a pan on the stove top to medium-hot

  3. Add some of the coconut oil

  4. Combine the mixture into patties by firmly pressing together

  5. Add to the hot pan and cook each side until golden
