Healthy winter baked vegetable slice recipe

Ingredients

  • 1/4 small pumpkin cubed
  • 1 small capsicum cut into quarters
  • 3 red onions finely sliced
  • 1 tablespoon butter
  • 1 tablespoon balsamic vinegar
  • 3 leaves stems fresh parsley
  • 1 stalk spring onion chopped finely
  • 2 cups of fresh kale and/or spinach leaves chopped
  • 200 grams ricotta
  • 1/2 cup buckwheat flour
  • 1 teaspoon baking powder
  • generous pinch of salt

Instructions

  1. Heat the oven to 170 degrees
  2. Add the pumpkin and capsicum to a baking dish and cook for 20 - 25 min
  3. Place a wide based pan (with lid) on the stove top to warm. Add the onion to the pan and cover with a lid
  4. Heat over low heat until the onion softens
  5. Remove the lid and increase the heat to medium
  6. Add the butter and stir
  7. Add the balsamic and stir and continue to cook onion until it has browned and thickened then remove from the heat
  8. To a mixing bowl add all of the ingredients and stir to combine
  9. Line a slice tray with baking paper, or grease well
  10. Place into the heated oven and bake for 20 minutes until golden on top
  11. Slice to serve
