Raw and healthy Cauliflower salad inspired by the garden

Ingredients

  • 1/4 cauliflower - florets finely chopped
  • 1 medium beetroot - cooked and diced
  • 1/2 avocado - diced
  • handful of fresh parsley
  • 2 tablespoons walnuts

Dressing

  • 1 lime juiced
  • 1 teaspoon olive oil
  • 1 tablespoon coconut aminos

Instructions

  1. Cook the beetroot, placing it in a saucepan of water that is brought to the boil. It is ready when a skewer can be inserted and removed easily. Remove from the water and set aside.
  2. Remove the skin from the beetroot and then dice
  3. Prepare the cauliflower by chopping the florets - not too finely
  4. Add the cauliflower to a serving dish and top with the remaining ingredients
  5. Combine the dressing ingredients and drizzle over the salad, stir through to combine and serve

Keep the cauliflower stems for use in another meal
