Spiced Christmas biscuits everyone will love

Gluten, egg and dairy free recipe for Christmas biscuits. Everyone will love these lightly spiced biscuits with the festive flavours of cinnamon, ginger and nutmeg.

  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/3 cup almond meal
  • 2/3 cup oat flour
  • 1 cup gluten free plain flour
  • pinch salt
  • 1 tablespoon cocao powder
  • pinch nutmeg
  • 1 teaspoon baking powder
  • 4 tablespoons maple syrup
  • 2 tablespoons coconut oil melted
  • 1/3 cup mashed/puree pumpkin


  1. Prepare the pumpkin and set aside
  2. Add all of the ingredients to a bowl and mix well to combine with a wooden spoon or similar
  3. Use your hands to continue to combine the ingredients until a smooth dough is formed
  4. Place the dough on a sheet of baking paper on the bench top
  5. Add another sheet of baking paper over the top and use a rolling pin to roll out flat
  6. Use cookie cutters to cut the dough into Christmas shapes
  7. Add each shape to a lined baking tray
  8. Continue until all of the dough has been used
  9. Place the tray into the fridge for 30 minutes
  10. Set the oven to heat to 160 degrees celcius about 6 minutes prior to adding
  11. Place the tray into the oven and cook for 6-8 minutes
  12. Remove from the oven to cool on a cake tray
  13. Place into an air tight container and see how many days they last.
