Lunch Box Raw Lemon Slice Recipe

When the winter lemons just keep on coming this allergy-friendly recipe is a good one to add to family lunch boxes. Gluten, dairy, egg and refined sugar free.

Ingredients

Slice Base

  • 1 1/2 cup puffed brown rice
  • 1/2 cup puffed millet
  • 3 tbsp tahini
  • 2 tbsp maple syrup
  • 1 cup dried strawberries or other dried fruit
  • 1 cup shredded coconut
  • 3 lemons juiced 200 ml

Chocolate

  • 1 tbsp coconut oil
  • 1/4 cup dairy free chocolate buttons Or 2 tbsp cocao powder

Instructions

  1. Add all of the Slice Base ingredients to a food processor and process until they come together and form a thick paste. Set aside

  2. To a saucepan add the Chocolate ingredients and heat over a low heat, stirring until just melted. Remove from the heat immediately and gently stir through the ingredients in the food processor

  3. Line a slice tray with baking paper

  4. Scoop the mixture into the lined tray and smooth to fill evenly. 

  5. Add the tray to the fridge to set for at least 30 minutes. Slice and return to the fridge in an airtight container. Use within a few days.
