Ingredients

  • 1 carrot - shaved or cut into fine strips
  • 1/4 capsicum - finely sliced
  • 1/2 cucumber - finely sliced
  • handful of Pistachio nuts unsalted if possible

Dressing

  • 1/2 teaspoon orange flower water
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon honey
  • fresh coriander to serve

Instructions

  1. Add the salad ingredients to a serving plate and toss gently with your fingers to combine
  2. Mix the ingredients for the dressing together and drizzle over the salad
  3. Top with fresh coriander leaves
