Warm Vegetable Salad Recipe
July 9, 2012
Our household has recently become addicted to quinoa. It happened quickly! Last week I made a Quinoa and Chicken Salad and I made this last night.
On a visit to the South Melbourne Market I stocked up on two types so there will possibly be plenty of quinoa recipes coming soon! If you haven’t tried it yet give it a go. It is a lovely addition to a meal and has a very mild nutty flavor. It is easy to cook and highly nutritious.
This is the recipe I cooked for dinner last night:
Serves: 4 adults as a side dish, or two as a main
Preparation time: 30 minutes (including time to bake the pumpkin)
Cook time: 25 minutes
This post is linked to Veggie Mama’s meatless Monday. Stop by to see some other fabulous meal ideas – she posted a lovely vegetable and quinoa recipe too! Great minds think alike…
I would love to hear what you your favorite way to use quinoa is. One of A Fresh Legacy Facebook friends says she uses it in hamburgers. Do you have some other tips for me to cover our new addiction to quinoa?
