I am excited (and nervous) to have this recipe as my first Fresh and Fast Friday recipe. Who has never pondered what to cook QUICKLY at the end of a busy day or week ??
I find pasta so easy, nutritious and quick to make. You can use almost any ingredients you have available. This is a combination we often eat and is enjoyed by the kids and Mr Fresh and I.
Preparation Time: 10 minutes
Cook Time: 15 minutes
1 zucchini peeled and sliced to 1 cm thickness
1/2 purple sweet potato (kumara) peeled and sliced to 1/2 to 1 cm thick rounds
1 tablespoon of cooking oil
400 grams of dry pasta of choice
2 cloves of garlic finely chopped
1/2 capsicum (red or green) sliced into thin strips
1 punnet of cherry tomatoes or 4-5 quartered tomatoes (approximately 250 grams)
1 tin 425 gram of tuna in spring water
6 spinach leaves finely chopped
handful of fresh basil leaves torn
3 sprigs of fresh parsley chopped
salt and pepper
1 tablespoon olive oil
Fresh Parmesan cheese finely shaved
Put a saucepan of water onto boil
To a griddle pan or fry pan add the zucchini slices and sweet potato (kumara) to cook for 5 minutes each side.
Remove the zucchini, slice into pieces and set aside. Leave the sweet potato (kumara) in the cooling pan to continue to cook
Add the dry pasta to the boiling water to cook
Put the cooking oil into a fry pan on medium heat and add the garlic after a minute, stir
Add the sweet potato (kumara) and zucchini to the garlic and oil and stir
Add the tomatoes and cook for 5 minutes
Add the tuna, spinach, herbs and cooked pasta. Stir to combine and heat through all ingredients until the herbs and spinach start to wilt
Season with salt and pepper
Drizzle the olive oil over the top of the pasta
Top with the freshly shaved Parmesan
