Spiced Cauliflower Salad

Try this vegan friendly salad served warm from the oven. The cauliflower is baked and coated in a warm spice mix. The addition of the chick peas mean it can be enjoyed as a main meal if you wish. It uses seasonal produce and common spices you will have in your pantry to add some zing to your dinner plate.
Set the oven to heat to 170 degrees (fan forced)
Mix the spice ingredients together with the flour in a wide flat bowl or on a plate
Put 2 tablespoons olive oil into a small dish
Dip the cauliflower florets into the olive oil and then roll in the spice mix before placing in a baking dish. Continue until all cauliflower pieces are covered in the spice mix.
Add the chickpeas and cubed beetroot to the baking dish and drizzle with olive oil and a squeeze of lemon juice.
Add the baking tray to the oven and cook for 35-40 minutes until the cauliflower is cooked and golden in colour. Remove from the oven to cool for 5 minutes.
Place the rocket and parsley onto a serving plate. Add the cauliflower, chickpeas, beetroot and sliced avocado
Combine the ingredients of the dressing and add to the salad prior to serving.
