This recipe is perfect for entertaining. It takes a while to cook but it is time that you do not have to be attending to it. Once cooked it can be served with sides of salad, vegetables and rice or a filling for tacos, wraps or simply in a bowl accompanied by other ingredients you love to eat.
My kids always enjoy the opportunity to add their own ingredients to their plates so it is an easy dinner, placing everything on the table and everyone can help themselves.
I hope you enjoy my recipe for pulled pork. I have listed previous versions I have made below the recipe.
This one was designed to be suited to the SIBO diet.
Turn on the oven to 120 degrees celcius to heat.
To a pan that can be used on the stove top and in the oven, add the oil and spices and heat until the oil melts and the spices are fragrant
Stir and add the pork, rolling to coat and brown on each side
Add the tomato and water and bring to a simmer
Add to the oven and cook for 5 hours at 120 degrees celcius
Check periodically to ensure that water remains in the dish, add more water if necesssary
When pieces of meat come away from the main piece of meat when pulled remove from the oven and set aside to cool for 5-10 minutes
Using tongs or two forks, pull apart the meat, shredding it into small pieces
Add the meat to a bowl and serve with sides of your choice
