I made these on the weekend when Mr Fresh and the boys were in the garden.
These fruit balls are quick and easy to make. They taste great and are a healthy snack option for the kids.
The bitterness of the cocoa combines well with the sharpness of the dried apricot. Smoothed by the caramel flavor of the dates and the vanilla essence I think they are a lovely combination.
Use any dried fruit that your children enjoy, I will be experimenting and trying many other fruit combinations. In the meantime, Mr Fresh has almost finished off this whole lot – the kids barely had a taste!
Makes: 16 balls
Preparation Time: 10 minutes
1/2 cup of dried apricots
1/2 cup of dried pitted dates
1/2 cup of shredded coconut
2 tablespoons of boiling water
1/2 cup of brown rice flour
2 tablespoons of cocoa powder
2 teaspoons of vanilla essence
Extra 2 tablespoons of shredded coconut
Put the fruit and coconut into a food processor or blender and pulse until finely chopped
Add the boiling water, rice flour, cocoa powder and vanilla essence and pulse again until combined into a thick paste
Using a spoon scoop out a ping pong ball size an mould into a ball
Roll in the extra coconut and continue until all mixture is used
Store in a container int he fridge for up to a week – if they last that long!
