I love a family meal that can be quickly and easily prepared, shoved in the oven and then served. This is one of those low effort meals. Technically this meal may not be a traditional fajita recipe. I am willing to ignore that as it is a family friendly winner with lovely Mexican flavors, plus I made it and therefore can call it what ever I like! I added zucchini to the mix to boost the vegetable servings. Corn is also a great side dish to serve with this meal if you want to add more.
