Warm Vegetable Salad

 

Our household has recently become addicted to quinoa. It happened quickly! Last week I made a Quinoa and Chicken Salad and I made this last night.

On a visit to the South Melbourne Market I stocked up on two types so there will possibly be plenty of quinoa recipes coming soon! If you haven’t tried it yet give it a go. It is a lovely addition to a meal and has a very mild nutty flavor. It is easy to cook and highly nutritious.

This is the recipe I cooked for dinner last night:

Serves: 4 adults as a side dish, or two as a main

Preparation time: 30 minutes (including time to bake the pumpkin)

Cook time: 25 minutes

Ingredients:

  • 1 cup of quinoa
  • 1 1/2 cups of water
  • zest of 1 lemon
  • 2 tablespoons of Red Wine Jus (I used a pre made one from the Market. Substitute with red wine vinegar and a dash of balsamic)
  • 1 tablespoon olive oil
  • 1/2 cup of freshly podded peas
  • 1/2 cup of beans – chopped
  • 125 grams of tofu – cut into cubes
  • 200 grams of pumpkin – cubed and baked
  • 3 sprigs of fresh parsley
  • 50 grams of marinated fetta

Steps:

  1. Cook the peas and beans in boiling water for a few minutes until they are just cooked, remove from heat and drain
  2. Simmer the quinoa and the water for 10 minutes then remove from the heat and sit to rest for 10 minutes
  3. While the quinoa is cooking fry the tofu cubes in a pan over medium high heat until browned
  4. Combine the Red Wine Jus and Olive Oil
  5. Put the quinoa into a serving bowl and add lemon zest and Red wine Jus and Olive Oil and stir to combine
  6. Add the peas and beans, tofu, the baked pumpkin, parsley, and fetta pieces
  7. Gently mix to combine and serve

    I’ve tried quinoa once and didn’t enjoy it (must be the only health nut that didn’t like it). However, I bought it again and I’m going to try your Quinoa and chicken 🙂

    The last time I used quinoa it was in a similar way. Warm, with some veg that I had cooked down with the quinoa. Love the addition of feta 🙂
