Vegetable Fritter Recipe

 

This weekend we visited our local farmers market and picked up some beautiful produce, including more purple heirloom carrots from an organic farmer. I made these fritters when we returned from the market.

  • Serves: 14 fritters (about 10cm each)
  • Preparation Time: 15 minutes
  • Cook Time: 15 – 20 minutes

Ingredients:

  • 1 medium sized potato – peeled and cut into small 6-8 pieces
  • 1 small sweet potato – peeled and cut into 6-8 pieces
  • 2 tablespoons yogurt
  • 2 small carrots – peeled and grated
  • 1/2 zucchini – peeled and grated
  • 2 tablespoons of coriander leaves – chopped
  • 1 teaspoon of coriander root – chopped finely
  • 2 tablespoons of rice flour
  • 2 eggs lightly whisked
  • 2 teaspoons of olive oil – I used lime infused olive oil
  • salt and pepper
  • 1/3 cup of cooking oil of choice
  • Sweet chilli sauce, or chilli jam to serve

Steps:

  1. Set a saucepan of water to boil and cook the potato and sweet potato
  2. Drain the water from the saucepan and mash, adding 2 tablespoons of yogurt then set aside
  3. In a bowl put the coriander root and leaves, the rice flour, the whisked eggs and oil and stir to combine
  4. Add the grated carrot and zucchini to the bowl
  5. Add the mashed potato mix and stir to combine adding salt and pepper to season once well combined
  6. Heat a pan to medium high heat, add 1/2 the cooking oil and wait until it is hot and starting to bubble around the edges – you can test if it’s ready by adding a small drop of the mix. If it sizzles well then it is ready to commence cooking.
  7. To the hot pan make the fritters in batches by adding a dollop of mixture and patting it down so that it is not thicker than 1cm
  8. Cook each side for approximately 8 minutes until dark golden colour and the fritter can be easily turned with a spatula
  9. Cook the other side for the same amount of time
  10. Remove and drain on paper towel for 5 minutes
  11. Serve with a salad, or as nibbles with sweet chilli sauce

Hints and Tips:

  • You can make the mixture during the day and refrigerate until ready to cook
  • Leave the coriander root out if you do not have access to it
  • The pototo and sweet potato could also be grated (not tested – I usually mash)
  • Let the fritters sit for at least 5 minutes after cooking to drain excess oil and set
  • As an alternate sauce, or dressing use natural yogurt combined with freshly chopped coriander leaves and 1/2 lime juiced. I would normally use my home made yogurt but had run out…
  • Substitute any root vegetables you have available
