Steak Cous Cous Salad

If you follow us on Facebook, you would know that my parents arrived for a long weekend recently with numerous kilos of fresh figs from dad’s tree.

Figs rot very quickly once picked so I set to work using them.  

I made:

  • Fabulous Fig Jam (recipe coming next week)
  • Vanilla and Fig Sorbet
  • Fruit leather in the dehydrator for the kids snack boxes (all gone!)
  • Dried sliced figs, also in the dehydrator (nearly gone…)

We are enjoying eating the figs dried and have been adding them to all manner of dishes. This meal has been one of our favorites.

Steak and Cous Cous Salad, wholesome and satisfying. It contains the goodness of spinach, chickpeas, zucchini and dried figs with a hummus dressing. A complete family meal.

Ingredients
Steak Marinate
  • 1 teaspoon cumin
  • 1 tablespoon oil
  • zest 1 lemon
  • 1 tablespoon honey
  • 400 grams rump steak
Salad
  • 1 and ½ cups large pearl cous cous
  • 1 tablespoon oil
  • 1 teaspoon cumin
  • 425 gram tin of chickpeas
  • ½ (generous) cup of dried figs
  • 120 grams spinach leaves
  • ½ zucchini - peeled and sliced into ribbons
  • fresh mint leaves
Dressing
  • ⅓ cup of hummus
  • 1 and ½ lemons juiced
Instructions
  1. Combine the ingredients for the marinate and add it to a bowl with the steak and set aside
  2. Cook the cous cous in boiling water until tender, drain and set aside to cool
  3. In a hot pan add the oil and cumin and then add the drained and rinsed chickpeas
  4. Stir to coat and cook on a medium heat for a few minutes
  5. Remove from the heat and set aside to cool
  6. Combine the dressing ingredients and set aside for serving
  7. Once the cous cous and chickpeas have cooled add them to a serving dish with the other salad ingredients
  8. Cook the steak to your liking and slice into thin strips to top the salad
  9. Serve drizzled with the dressing
Notes
You could use fresh figs if you wish.

We really enjoyed the different textures in this salad. With the inclusions of spinach, zucchini and chick peas it is a wholesome and satisfying family meal.
