Spicy Prawn Salad

Prawns are not on my market shopping list very often, however, they are one of my favorite ingredients. When my eldest son started school I met a lovely school mum from Korea. She introduced me to Gochujang – a Korean chilli paste. Her mum makes a huge batch for her each time she visits and my friend very generously fills a container for me to use. Wow, we love it! We use it in this Crispy Chicken recipe and I have been looking forward to trying it with prawns.

The weather over the Christmas period in Australia can be HOT! The heat lends itself to light, fresh ingredients and fish or seafood based recipes are the perfect treat for the festive menu.  This recipe has been created with the thought of it being served to friends and family over the festive period, or to simply enjoy on a hot Summer evening. It can be easily adapted for the kids by simply not adding the dressing – an easy family friendly recipe.

Fresh and light with a little spice from a dressing of Korean Gochujang chilli paste.

Serves: 4
  • ½ tablespoon coconut oil
  • 500 grams prawns
  • 3 garlic cloves - chopped
  • ½ tablespoon honey
  • cos lettuce - or lettuce of choice
  • carrot - peeled and shredded or grated
  • tomatoes - 150 grams of type(s) of choice
  • 1 small cucumber - peeled and thinly sliced
  • Dressing:
  • ½ cup of plain greek style yogurt
  • 2 tablespoons lime juice
  • ½ tablespoon Gochujang paste (Korean Chilli Paste)
  • Fresh coriander leaves
  • Fresh basil leaves
  1. Put the salad ingredients onto serving plates
  2. *The following instructions are based on cooking the prawns in 3 batches
  3. Add the coconut oil to a heated pan and then the garlic and honey
  4. Add the prawns and cook for a few minutes, turn and finish cooking then remove from the heat. Repeat until all prawns are cooked
  5. Add to the salad and serve with a drizzle of the dressing
My kids are not huge fans of lettuce so I served theirs with rice stick noodles instead of lettuce and no dressing.
Cook time is based on 3 x 3 min batches of the prawns

    What a lovely prawn salad. I have never had Koren spicy chilli paste but is is appearing everywhere so we will have to try some. This is a perfect hot weather salad, healthy, fresh and flavoursome. Happy New Year to you and your family Kyrstie 😀
