Slow Cooker Chicken Casserole

I have made this recipe so many times over the last couple of months that the recipe has transitioned from including fresh cherry tomatoes that I had in my garden to include dehydrated tomatoes (also from the garden but dried from earlier harvests). I am currently harvesting more kale than baby spinach so that has also changed in the ingredient list. The ability to make such modifications is the beauty of this dish, it can be adapted to include the seasonal ingredients that you have available.
A good chicken casserole is a family favorite, crowd pleaser recipe. If you do not have a recipe that your family loves, I hope that you will give this one a try. The flavor of the meal is enriched with chorizo and fresh herbs. Once the preparation is complete, set it to cook and get on with your day 🙂
This recipe is based on using the slow cooker pan to saute the ingredients, prior to setting it to cook. If your machine does not have this handy function then complete the first steps in a separate pan and then add the prepared ingredients to your slow cooker at step 8. The saute function is one of my favorite features of my Kambrook Slow Cooker. In addition to reducing washing up it makes the meal preparation quick and easy.
