Slow Cooker Chicken Casserole

I have made this recipe so many times over the last couple of months that the recipe has transitioned from including fresh cherry tomatoes that I had in my garden to include dehydrated tomatoes (also from the garden but dried from earlier harvests).  I am currently harvesting more kale than baby spinach so that has also changed in the ingredient list. The ability to make such modifications is the beauty of this dish, it can be adapted to include the seasonal ingredients that you have available.

A good chicken casserole is a family favorite, crowd pleaser recipe. If you do not have a recipe that your family loves, I hope that you will give this one a try. The flavor of the meal is enriched with chorizo and fresh herbs. Once the preparation is complete, set it to cook and get on with your day :-)

This recipe is based on using the slow cooker pan to saute the ingredients, prior to setting it to cook. If your machine does not have this handy function then complete the first steps in a separate pan and then add the prepared ingredients to your slow cooker at step 8. The saute function is one of my favorite features of my Kambrook Slow Cooker. In addition to reducing washing up it makes the meal preparation quick and easy.

A good chicken casserole is a family favorite, crowd pleaser recipe. This slow cooker recipe includes fresh ingredients from my Winter garden.

Ingredients
  • 1 tablespoon oil
  • 4 cloves garlic - chopped finely
  • 1 onion - chopped finely
  • ½ chorizo sausage - chopped (about 80 grams)
  • 6 chicken drumsticks or pieces of your choice
  • salt and pepper to season chicken
  • ½ cup white wine
  • 150 grams cherry tomatoes or ⅓ cup of dried tomatoes
  • 90 grams fresh spinach (or kale) leaves - finely chopped
  • 1 carrot - diced
  • 200 grams capsicum - sliced into strips
  • 1 lemon - zest and juice
  • 1 sprig fresh rosemary
  • 4 sprigs thyme, or lemon thyme
  • 300 ml passata
  • fresh parsley to serve
Instructions
  1. Add oil to the removable pan of the slow cooker and place it on medium heat on the stove top
  2. Add garlic, onion and chorizo and stir until softened
  3. Season the chicken with salt and pepper and add it to the hot pan with the garlic, onion and chorizo
  4. Turn the chicken until it starts to color on each side
  5. Add the white wine and allow it to simmer until it halves
  6. Add the tomatoes, spinach (or kale), capsicum, zest, herbs and passata
  7. Jiggle the ingredients to evenly distribute
  8. Remove the pan from the stove top and return it to the slow cooker
  9. Turn on the slow cooker to high and set to cook for 3 hours
  10. Serve with cous cous and fresh parsley

    I love the slow cooker for winter meals. Going to give this a go, but will have to do it on low for longer so hopefully it works!

    Sounds terrific, my husband loves anything with chorizo so this would certainly make him happy. Might have to give it a try next week.

      Thanks Barbara. I find chorizo to be a great staple to always have on hand. It adds a wonderful depth of flavor to anything it is added to and also helps to create a low cost meal. I keep some in the freezer at all times :-)
