 Slow cooked beef ragu


Before the warmer weather hits I am going to sneak in a few more meals that warm you to the core. The one thing I miss about winter is the comfort food, tasty, rich, easy to cook nourishing meals. I adore ragu and those that visit here often will know that I love all kinds of pasta. This recipe is a winner with my family.  I like to make it when entertaining also as it is easy to put it on to cook. The flavours are lovely, not too rich and a little more fancy than spaghetti bolognese.

  • Serves: 4 adults
  • Preparation Time: 15 minutes
  • Cook Time: 2 and 1/2 to 3 hours until meat is falling apart


  •  500 grams of diced beef
  • 1/2 tablespoon of oil ( twice)
  • 3 garlic cloves – chopped
  • 2 carrots – peeled and diced
  • 1/2 capsicum – diced
  • 1/3 cup red wine
  • 3 tins of chopped tomatoes – 400 ml each
  • 1 cup of water from rinsing the tomato tins out (see steps)
  • 1/2 cup of sun dried tomatoes chopped
  • fresh rosemary sprigs
  • fresh parsley
  • fresh oregano leaves
  • salt and pepper
  • Parmesan cheese to serve

Beef Ragu ingredients



  1. Add oil to the pan and brown the meat then remove and set aside
  2. Add oil to the pan again and then add the garlic, carrots, capsicum and stir until it they start to soften
  3. Return the meat to the pan and add the wine, stir and wait until it reduces by about half
  4. Add the tinned tomatoes and sun dried tomatoes
  5. Fill each of the tins with a 1/3 of water and swish around to remove excess tomato. Complete for all three tins so that you have a total of 1 cup of water/tomato juice and add it to the pan
  6. Add the herbs and simmer gently for 2 and 1/2 hours to 3 hours until the meat is tender. Check liquid level occasionally and stir
  7. Cook pasta according to packet instructions
  8. Serve with fresh parmesan cheese and crusty bread, or a salad if preferred.
