Balsamic Glazed Meatloaf Recipe

My mum gave me this recipe and I have modified it over time to the recipe below.  The bacon wrapping and the sauce that coats the loaf has a rich caramel like flavor.  An “old school” family favorite. The glaze makes the world of difference to the flavor of this meatloaf. It is an easy way to make mince a little more flavorsome.

Ingredients
  • ¾ cup of fresh breadcrumbs (2 pieces of bread)
  • 2 garlic cloves
  • 1 onion
  • 1 carrot grated
  • 1 zucchini grated
  • 500 grams of mince beef
  • 1 large sprig of fresh rosemary finely chopped
  • 3 small sprigs of fresh parsley finely chopped
  • 300-400 grams of bacon
  • Sauce ingredients:
  • ⅓ cup tomato sauce or chutney
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons brown sugar
Instructions
  1. Turn the oven on to heat to 180 degrees
  2. Add the pieces of bread to a food processor/blender and process until fine crumbs
  3. Add the onion and garlic to a food processor and whizz until roughly processed
  4. Add bread crumbs to a bowl with the remaining ingredients (excluding the bacon) for the meat loaf and mix to combine
  5. In a loaf tin lay the bacon across the tin, so that the ends are overhanging the edge, alternating the thin and thick ends
  6. Add the meatloaf ingredients on top of the bacon and then fold the bacon over top
  7. Make the sauce by adding the ingredients to a saucepan and stirring until sugar dissolves
  8. Brush the sauce on top of the bacon
  9. Put the loaf into the oven and cook for 20 minutes
  10. Remove from the oven and gently tip the loaf and drain the excess liquid from the pan
  11. Return to the oven for a further 15 minutes, glazing again with any left over sauce. If the bacon is browning too much at this point cover the top of the pan with al foil
  12. Remove from oven and sit for 5 minutes to cool slightly before removing from the pan
  13. Slice and serve with vegetables or salad
Notes
Use good quality lean mince to avoid excess water when cooking

    might do this one tomorrow now the weather has taken a cold turn! Here’s a tip i’d like to share – if you have day old bread or left over bread roll, freeze it and take the bread/roll out of the freezer when you next need bread crumbs and grate the rolls/bread while frozen, so easy!

      Hi Jodie,
      thanks for the tip. That is something we do as well except I don’t grate I just tear up and put into the food processor. Grating is less dishes so I will give that a go!
