A collection of the best summer salads

Avoid boring salads

The summer holiday period is when the vegetable garden becomes increasingly productive and I can drastically reduce my trips to the store. At this time of year almost all of our fresh produce is collected from the backyard.

I could eat salads for dinner every night of the week, unfortunately Mr Fresh is not so thrilled to eat them every night.   I am constantly trying to create THE perfect salad that is full of fresh garden ingredients that he will eat multiple times per week without complaining. To be honest, once the summer  produce commences it goes onto the family meal table in some format regardless of any complaints as we have it available, abundant and it costs nothing to grab it from the garden.

Summer is also the season of entertaining and there is nothing simpler than taking along a salad as a plate to share with friends over a meal and a long conversation as the kids play in the fading sun of a warm evening.

If you like the look of any of these salads bee sure to “pin”them so you can find the recipe when you need it.
