Baked Chicken Fajita

I love a family meal that can be quickly and easily prepared, shoved in the oven and then served. This is one of those low effort meals. Technically this meal may not be a traditional fajita recipe. I am willing to ignore that as it is a family friendly winner with lovely Mexican flavors, plus I made it and therefore can call it what ever I like!  I added zucchini to the mix to boost the vegetable servings. Corn is also a great side dish to serve with this meal if you want to add more.

Baked Chicken Fajita. An easy family meal to prepare and share. Serve with rice or wraps with smashed avocado.

  • 3 capsicum - quartered
  • 400 grams chicken thighs - cut in half
  • 4 tomatoes - cut into chunks
  • 2 small red onions - cut into small wedges
  • 1 zucchini - cut into wedges
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 lime - zest and juice
  • 1 teaspoon salt
  • 2 garlic cloves - chopped
  • 1 teaspoon sumac
  • 2 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • To serve:
  • 1 avocado mashed
  • 1 tablespoon yogurt
  • ½ lemon - juiced
  • fresh coriander leaves
  • extra lime quartered (optional)
  • cooked rice or wraps
  1. Set the oven to heat to 170 degrees
  2. Mix the avocado, yogurt and lemon juice to combine and set aside
  3. Add capsicums, chicken, onion and zucchini to a casserole dish that can be covered with a lid and placed in the oven.
  4. Combine the oil, vinegar, lime juice and zest, salt and herbs. Mix and pour over the ingredients in the casserole dish. Stir to coat well.
  5. Cover with a lid and add to the warmed oven for 40 minutes
  6. Uncover and leave in the oven for a further 5 minutes to lightly color the top of the ingredients
  7. Serve with rice, topped with fresh coriander and the avocado mixture or with wraps or tortillas
